DoughBed by SourHouse
The DoughBed by Sourhouse is a new product for mixing and bulk fermenting your dough. It is a large flat bowl with a warming mat that keeps your dough at a consistent temperature (about 78F/26C) throughout bulk fermentation. A great product for bakers who like a consistent process and result. Use Discount Code “TC25” for 10% off at checkout.
Brod & Taylor Folding Warm Proofer
The Brod & Taylor proofer is a folding proofing chamber that warms up your dough and keeps it at a constant temperature during bulk fermentation and/or final proofing.
For bakers in cool climates or cold kitchens, this is a total game-changer. I use mine year round when bulk fermenting at 78-80F/27-28C.
Ooni Halo Pro Mixer
This new spiral mixer from Ooni is getting great reviews from sourdough bakers. It is pricey and I haven’t tried it yet, but many others love it.
Hanna Halo2 pH Meter
Some bakers use pH meters to test the readiness of their starter and dough. The Hanna Halo 2 is a lab-quality pH tester at a very reasonable price point. These testers were previously out of reach for most sourdough bakers. Use the code SOURDOUGH10 at checkout for a 10% discount (U.S. addresses only).
Most bakers don’t need a pH meter, but I find it useful for monitoring the acidity of my starter. I also use it as an additional checkpoint to determine the cutoff of bulk fermentation, but it is not a foolproof replacement for baker’s experience.
Sourdough Baking: A Treatise
For science-minded bakers, Thomas Teffri-Chambelland’s new book, “Sourdough Baking: A Treatise,” is a revelation. Highly recommended.
Plan ahead if buying for the holidays. It ships from Europe.
Challenger Bread Pan
The Challenger Bread Pan was designed specifically for sourdough baking. It bakes wonderful loaves.
This pan is features in my video, “Sourdough for Busy People: The Sourdough Brothers.”
essentials
Wire Monkey Lame
Wire Monkey makes a line of popular lames for scoring sourdough bread. The “UFO” style is very popular. I prefer the “Goose” lame which came out in 2022.
This lame has a protective blade cover, and it feels great in the hand for all types of scoring.
ThermaPen ONE
The ThermaPen ONE is the top-of-the-line digital probe thermometer. One of my favorite kitchen tools.
This thermometer is fast and accurate. You can also use it as a meat thermometer.
CDK Non-Stick Bench Scraper
A bench scraper / bench knife is an essential tool for bakers. The CDK version has a unique non-stick coating. I do not use any flour when shaping with this tool.
It comes in two sizes — I own both. I prefer the large scraper, but it is really a question of personal preference.
Warming Mat from Cozy Bread
This thermostat-controlled warming mat can be used to keep your starter and dough warm in the winter. You can also buy a fabric cover/tent to better control the temperature of your fermentation vessel. Cozy Bread also sells a smaller, round warming mat with an enclosure, just for starter jars.
Bannetons From Brod & Taylor
These new bannetons from Brod and Taylor are lightweight, and made from renewable materials. Batard and boule shapes available.
These new bannetons are lightweight and they stack together nicely for compact storage.
Sourdough Home, by Brod & Taylor
Keep your starter warm in the winter and cool in the summer. This warm/cold mini-fridge can keep your starter at a consistent temperature year round.
I use mine both in the summer, to keep my starter cool, and in the winter. The device seems small, but you can also bulk ferment one batch of dough in it. I have a list of vessels that fit in the device on my website at https://thesourdoughjourney.com/products.
Scroll down to this item on that page and you’ll find links to vessels that fit.
KItchen Scale
I like this scale from Sur La Table. It is one piece with a glass top, so it is super easy to keep clean. is reasonably accurate and fast.
There are cheaper scales out there, but the easy of cleaning gets a high rating in my book.
stocking stuffers
DOAP Silicone Scrubber
This silicone scrubber will become your best friend in the kitchen. The innovative design works perfectly for removing sticky dough from your hands, and it also can be used to scrub stubborn, crusty buildup off your jars and vessels
Silicone Bread Sling from Rosehill
Silicone bread slings are a popular alternative to using parchment paper under your loaves when baking in a dutch oven. The perforated silicone slings from Rosehill Sourdough are the best.
There are many shapes and sizes available. Select the size that best suits your baking vessel.
Mercer Bread Knife
This is the best, inexpensive bread knife you will find anywhere.
I’ve been using it for 5 years and it is still going strong. Highly recommended.
Kitchen Thermometers
Sourdough bakers can never have too many thermometers.
I love these inexpensive, bluetooth thermometers for monitoring dough temperatures inside my proofer, starter temperatures, and fridge temp (Don’t put them in the oven!)
Infrared Thermometer
An infrared thermometer is a great tool for checking the temperature of your oven and Dutch oven to get more consistent baking results.
I use mine to test the temperature of my Dutch oven when preheating, and when re-heating between bakes to ensure I’m getting a consistent preheating and baking temperature.
Starter Warmer
These inexpensive starter warmers are a new arrival this year. A simple way to keep your starter warm in a cool kitchen.
There are other more expensive options with more features, but this basic tool works for warming your starter in the winter.
Kitchen Timer
A kitchen timer is an essential item for sourdough bakers. This inexpensive timer is easy to set and run.
